Overlooking the enchanting greenery of the Botanical Gardens, The Colonial Pavilion is a brand new fusion restaurant which marries together British and Indian flavours to make for a unique dining experience. Set in sophisticated confines, the eatery’s signature dishes include the likes of Masala-marinated cod and chips and pan-fried sea bass infused with cardamom.

After kicking off a with a glass of sparkling wine (£4.90), British banquets – with a strictly sub-continental twist – may lead the way with the two-day cured salmon dressed in mustard seeds, dill, and coriander and served with a mint, cucumber and tomato salad (£8.75). The main event could be made up of the slow-cooked lamb shanks with a rogan josh jus, Parmesan mash, and roasted carrots (£19.95) or the pan-fried sea bass infused with cardamom and fennel with spinach risotto and roasted cherry tomatoes (£17.95). To finish taste buds will be sweetened with a dessert such as the Jaipur mess with meringues, ras malai, cream, and raspberries (£6.95).
