Stirring the melting pot of a Malaysian kitchen, Raffles serves up rich and varied cuisine, taking inspiration from Malay, Mandarin Chinese, and Tamil Indian cooking methods. All dishes are served in regal style, with crystal cut glass and bone china flanking mouth-watering arrays of satay and tempura. The surrounding environs complement the decadent cuisine with chandeliers and linen-topped tables, while a wine list crammed with a variety of distinct old and new world wines tempts diners.
Diners in twos and fours will have full rein over one of the three menus on offer, picking a starter, second course and main from the Malaysian Malay, Mandarin Chinese or Tamil Indian selections. Malaysian gastronomes can set their taste buds sailing with ikan goring: a dish of fried fish with an aromatic herb salad and sweet chilli pickle; while Mandarin explorers could hop aboard a second course of gently roasted chicken coated with cardamom, fennel, szechuan pepper, cloves and cinnamon, accompanied with a sweet chilli dip. Those savouring the taste of Tamil cuisine will find main courses like captain’s curry: a spicy chicken flavoured with coconut milk served with roti chanai and accompanied by green beans and beetroot, or can try one of the many seafood options, including Penang lobster or chilli crab.
