The three hour course tutors groups no bigger than 12 in how to wield the kitchen’s most essential instrument. Students are coached in dicing, the art of julienne, and ultra-fine chopping of fruit and vegetables, plus choosing and looking after knives. Jointing a chicken is one of the skills covered, which is necessary as part of the three course meal preparation.
