Ametsa with Arzak Instruction is a Michelin-starred, triple AA-Rosette-awarded Spanish restaurant located with The Halkin by COMO, close to Hyde Park. The restaurant is the result of a collaboration between The Halkin and a team of culinary experts which includes world-renowned chef Elena Arzak. The restaurant showcases the flavours of the Basque Country with a varied and authentic menu which uses the finest ingredients and culinary know-how which has been passed down for generations. The interior features a wave-like ceiling, created from 7,000 glass receptacles filled with spices, and an oak floor. The ethos of the restaurateurs is to blend traditional Basque cooking with modern and surprising twists, to create a memorable and enjoyable experience for all patrons.

It happened not to be my cup of tea. The setting made me feel that I was in a chemist/ herballist-experimentator laboratory. Appetisers tasted fine, but again, were served as if they’d just undergone chemistry experiment. Scallops were ok, a little greasy to my liking. Then there was monkfish-true assault to my taste buds really – unpleasantly sour and fat/oil in which it was fried tasted horrible, long lasting not easy get rid of aftertaste, I trust it was fresh, it just did not taste it. It was nice of the team to ask each time my opinion. When I mentioned monkfish I was offered another fish course to try. As it was tasting menu and portions were minute, I agreed and went for tuna in cinnamon (yep, I was experimenting!). It was borderline ok, tuna itself was cooked nicely, but I will never have it again, those two were simply not meant to be together in my opinion. It also came with golden beetroot in black aubergine powder. I love aubergines, but powdered it tasted of nothing. Iberian pork was lovely and desert was nice. Adding salted spinach leaf to pudding worked really well for me. I had ample time between the courses and had a look around the tables – most of the time they had no food on – portions were small (beautifully presented, I must say) and eaten quickly leaving a lot of time to refill glasses and conversation. However, waiters were busy in and out of the kitchen with trays. Service in general was very good and attentive. Sommelier initially made very good impression, was helpful, entertaining and interesting to listen to, but when I ordered desert wine he forgot to offer me to taste it, just poured it. Good, that I liked it. In overall – I appreciate the effort put into the idea of this establishment, but to me it came across as unnecessarily overly laboured with unpleasantly confusing ‘twists’ (sort of-let’s put those two together and see what happens), it’s not the Basque cuisine that I love and know. I shall not be rushing back.
