Opened in 2008 by competition-winning chef Russell Lee, The Fusion Room serves up contemporary British cuisine using locally-sourced produce where possible. Russell trained as a chef at The Flyde College, and has appeared on TV and at national competitions. His sleek restaurant lets guests tuck into dishes from a seasonal menu, or head to the first-floor bar for a cocktail amid chic surrounds. The restaurant’s team of culinary creators can design bespoke menus for a variety of occasions, from intimate family gatherings to large marquee functions. The eatery is open Monday to Friday from midday, Saturday from 5pm, and Sunday for private functions only.
