What differences are there between North and South Indian cuisine?
"Wheat is used a lot in North India, whereas it is rice that is prominent in the South. South Indian food can be healthier in comparison; a lot of dishes contain coconut because there is an abundance of the trees in the region. While North India is famous for its naan and Tandori roti, South Indian food is characterised by fragrance, flavours, seasoning and visual appeal."

What are the differences between authentic Indian cuisine and the cuisine cooked in the UK?
"In the UK it is milder, and prepared according to a British palate. Dishes cooked in India are usually spicier and use stronger flavours."

Any signature dishes?
"Our Dosa (pancakes of rice and lentils) and parotta (tiffin dish made with bread and vegetable korma). They're unique and flavoursome."
