His ethos on fine dining is evident in the work of head chef Joo Won’s food as classic French dishes are given bold, creative touches. Guests can dine on two courses for lunch or dinner. Visitors can start with such dishes as the Scottish scallops, paired with a white onion puree, sea vegetables and a shellfish bisque. If that doesn’t elicit a Pavlovian response, then try the salad of winter vegetables with Nashi pear and truffles instead. Mains include roasted cutlet of Iberico pork and poached fillet of Norwegian halibut. Those that forgo a starter can indulge in the likes of the spiced apple and milk chocolate souffle, or the caramelised pear tarte tatin.
