Mediterranean and Caribbean flavours mix in a two-course meal at One Fusion Restaurant. Starters may include a One Fusion sharing platter, with breaded chicken strips, king prawn tempura, piri piri chicken skewers and calamari, or Spanish style fishcakes in Caribbean spices. The main menu may hold delights such as a ravioli filled with lobster and king prawns in a Villa Rosa sauce, a calzone kiev, or The One beefburger, topped with cheese and serve with potato wedges.

G: How did you get started in the restaurant industry?

“I started working in a local restaurant at weekends while I was still at school and have been doing it ever since.”

G: What’s the restaurant like inside? What sort of look and feel were you going for?

“The restaurant has a real Mediterranean warmth to it with soft lighting and Moroccan pendants. We aim to provide a classy yet comfortable and relaxed dining experience.!

G: What was the inspiration for the menu? Does it have a unifying theme?

“The unifying theme to the menu is ‘classic Mediterranean food with a twist of the tropics.’ A fusion of Mediterranean and Caribbean cuisines to give mouthwatering results.”

G: What’s your favourite dish from the menu?

“That’s a tough one, it’s hard to pick a favourite! I’d go with the risotto Carib. I think it really epitomises the concept of the restaurant. Classic Italian arborio rice risotto packed full of Caribbean flavour with jerk chicken, sweet potato, rum and coconut.”

G: What made you want to work in food?

“Cooking has always been a passion of mine, since cooking with my mum and grandma from an early age. You get a nice feeling when you can share something you enjoy and it makes other people happy.”

G: Who is your culinary inspiration?

“I love Rick Stein and Heston Blumenthal, and their passion for food. Although they are very different chefs, they share the same love for producing delicious food.”

**G: If you could have dinner with any three people (living or dead, fact or fiction), who would they be?

** “Bill Hicks, because he was a comic genius and changed the way I looked at life. Bob Marley; his music changed the world. Finally, my wife.
