Jaswant Mehra, the head chef at 29 States is known in his native India for his appearances sharing recipes on local TV shows. Here, in this central York eatery, he composes a diverse menu of traditional Indian dishes prepared with the use of organic, sustainable meat, fish, poultry, vegetables, and grains. Dishes include marinated lamb chunks with Rajasthani red chillies and spices cooked with onion, tomato and Rajasthani spices, and minced meat curry cooked with peas, potato, ginger garlic paste and spices.
