A Christmas lunch at Cringletie House may begin with a starter such as slow-cooked blade of beef or crumbled goats’ cheese and roast red pepper risotto. For the main course, diners may tuck into roast breast of farmyard turkey with all the trimmings, or lemon and black pepper crusted cod fillet with chive mash, green vegetables and a prawn and caper sauce. A dessert such as homemade Christmas pudding or white chocolate cheesecake may be followed by mince pies and a warming coffee. 

Patrons visiting for a four-course dinner can enjoy the above as well as an intermediate course of lightly curried parsnip and apple soup before the main, plus a liqueur served after dessert. All guests may stay refreshed with two drinks each, such as wine, mulled wine, beer or a choice of soft drink. Customers may opt to add an overnight stay for £25 each.

The Merchant

The award-winning Cringletie House is set amid the greenery of the royal burgh of Peebles. The 19th-century hotel is situated less than ten minutes’ drive from the centre of the burgh and around an hour from both Edinburgh and Livingston. The hotel is well located for walks along the Scottish borders, fishing on the River Tweed or mountain biking on Glentress mountain. Other nearby attractions include Dawyck Botanical Garden, Rosslyn Chapel and Abbotsford House, the former home of Sir Walter Scott.

Accommodation is offered in nine bedrooms, four suites and a two-bedroom spa cottage with hot tub. Rooms sport classically styled decor, patterned feature walls and wooden furnishings, and specially designed accessible accommodation is also available. Visitors may make the most of complimentary Wi-Fi or opt for an in-room spa treatment. The Sutherland Restaurant serves fine dining cuisine and features hand-painted ceilings, chandeliers and views of the 28-acre grounds and walled garden.
