Freshly sizzled meats are served in the traditional Brazilian manner, carved directly onto diners' plates. Different cuts of beef, chicken, lamb and pork are there for the taking, cooked in rodizio style, rotated on skewers. An abundance of side dishes and salads are available to accompany the meats, with dishes such as three bean salad, giant couscous and pasta salad.

G: How did you get started in the restaurant industry?

"I have been in England for over 20 years and been in the restaurant industry for a good part of it. Having started in the back of the house cleaning dishes, to becoming manager and having my own business. I always thought the British needed something new, something less European, with pace and at the same time relaxed and cosy. We offer it. The two extremes of it, pace with grace."

G: What was the inspiration for the menu? Does it have a unifying theme?

"We have been carving meats in Brazil for over 300 years, and I found out that in England there is nowhere you can experiment with a variety of roasted meats and different types of cuts in the same restaurant. Thus we created Fogo Gaucho, where the choice is yours with an array of over 30 hot and cold dishes in our salad bar."

G: What makes your restaurant unique?

"We have an open BBQ, where you can see how we prepare all the roasted meat, and a beautiful 7-metre high restaurant with wide and high windows to let the sun come in. It is a really stunning building to dine in."

G: What is your favourite dish from the menu?

"We have a cut called Picanha, which is a part of the rump you can't find in England, as it is always sold as just rump. It is juicy and tender, and cooked with some garlic. It will melt in your mouth."
