Il Tabacchificio Hotel
A converted 1920s tobacco factory, the Il Tabacchificio Hotel welcomes travellers to a four star abode in the heart of Salento.

Cooking Classes
At the end of the cooking lesson every participant will be welcome to taste every dish prepared during the class. Written cooking recipes (available in Italian, English, German and French ) with all the recipes made during the class will be provided for everyone at the end of the lessons. 1 cooking class is about 3 hours long and will take place in the afternoon. Cooking classes could be declared in Italian, English, German and French. In every lesson guests will learn the origin of ingredients, the base of the Mediterranean cooking, how to cook fresh vegetables, different types of flour and fresh seafood from the Adriatic Sea.
Cooking Class Schedule:
- Monday: learn how to cook the classic dishes from Salento: starting with vegetables, broad beans and chicory, ‘‘Maccaruni’’ with broad beans cream and olives. Peas ‘‘cecamariti’’ style and ‘‘scurdijata’’ (mix of vegetables and fried bread).
- Tuesday: The popular ‘‘taiedda’’ from Lecce: rice, potatoes and mussels. Learn how to cook a vegetarian option suitable for all seasons with fresh vegetables: zucchini, artichokes, fresh tomatoes from the vegetable garden
- Wednesday: Fresh homemade pasta: la tria, le sagne, i cavatelli. We learn how to cook ciceri and tria, sagne with pork ragout Salento style. And also we learn The Cavatelli with broad beans and mussels.
- Thursday: The vegetables: the Mediterranean is a mix of culinary culture like the Eastern meze, and Salento is the center of this mix of culture. We will learn tomatoes ‘‘scattarisciati’’, the popular ‘‘pizzulle’’ (small pizzas with fried bread), eggplants ‘‘mbuttunate’’ (fried eggplants with tomatoes and pecorino cheese). And also i pipi cunzati and potatoes pitta
- Friday: Seafood: lu purpu a pignata (octopus in the pot) and scapece (tiny fish) gallipollina style - cooked traditionally for a tasty result of fresh seafood from the Adriatic Sea.
