All the bacon is dry cured by hand with a blend of curing salts and demerara sugar, and once cured is allowed to mature. If smoked, a blend of oak and beech wood chips is used for a lovely aromatic flavour.

All the sausages are made from prime cuts of shoulder, without added fat and made into natural skins. The resulting sausage will not leak fat in the pan.

Hams are butchered, cured and then cooked on the farm in the ham room.
