Patisserie Valerie
The story of Patisserie Valerie traces back to Theophile Vermeirsch (Theo), born in Antwerp in 1898, who, as a refugee from Belgium during World War I, arrived in London with his family. Employed as a pastry chef during this period, he later returned to Belgium around 1918 and wed Esther Van Gyseghem, born in 1900 in Oostende. The couple ventured back to London, where, in 1926, they jointly established a Belgian patisserie at the junction of Dean Street and Old Compton Street in Soho, London, under the name 'Patisserie Valerie.
