Each dining pair can start with a pakora platter for two, featuring a mix of vegetable and chicken pakoras, before moving on to a choice of curry and rice each. Options may include the likes of vegetable jaipuri or chicken tikka masala, accompanied by basmati boiled or pilau rice, with seafood dishes also available for an additional £3 supplement. G: Who is your culinary inspiration?

"Our head chef: for his passion and knowledge of an array of spices. He skilfully puts them together to make wonderful dishes."

G: What was the inspiration for the menu?

"We wanted to take spices from all the different regions in India and come up with individual dishes reflecting their roots. For example, the achari from Utter Pradesh uses spices indigenous to the Utter Pradesh region."

G: What's your favourite dish?

"It's a split between the South Indian garlic chilli chicken and the chasni, depending on the mood I'm in!"

G: What made you want to work in food?

"We're a family of foodies! It just seemed natural to us."

G: What's your first memory of cooking?

"In mama's kitchen, being told off for making a mess."
