Wagyu steak burgers

Prepared from 85%VL Wagyu beef steak trimmings, this excludes head meat, offals, bones, cartilages, blood vessels, backstrap gristles and glands. The fat content of the final product will not exceed 20%.

Cumberland sausages

Weigh required meat, 50% belly and 50% shoulder to achieve a minimum of 70% meat content. Mince the meat, and then add seasoning and rusk. Mix the product, add water and mince the meat again. Fill meat into casing.
